Pressing flowers for cakes, from garden to sponge
Which flowers are safe to eat, how we press them, and how long they keep.

We grow most of our edible flowers in two raised beds behind the studio: violas, cornflowers, calendula and borage.
They’re picked in the morning, pressed between baking paper for a week, then pressed into the buttercream on the day of collection so they keep their colour.

Tell us the day. We’ll bake the cake.
Most cakes need 5 days’ notice. Weekends in spring and December book up first.
